2003, Tempranillo(80%) and Graciano(20%) Was heaviest from the 20 yrs old Tempranillo vineyards, maceration for 12 hours with its natural yeast. The juices were transferred to other place to rest and fermentation up to 12 days. Fermentation stopped by cooling down the temperature & moved to oaks of 40% French and 60 % American for maximum 12 months. Bottling for the class of Spanish “Reserva” by storing it up to 24 months after bottling before it is allowed to release on the market. This wine works well to meats with complex garnish, vegetables Stock, or stew, wild game, fishes with a very complex garnish and chocolate desert. A wine offers a long & rich after taste.
