This Cava Rosy offers a lively and intense pinkish strawberry color. An aroma as of red fruits stepped into the alcohol made it giving off sweetness on the palate. The variety Grenache is collected at the beginning of October each year. Once in the cellar it is subjected to a short maceration the object being the extraction of the grapes´ color. After pressing, the free-run juice “mosto flor” is obtained. It is then subjected to a controlled fermentation at 16º/18ºC in stainless steel tanks. After bottling in the first months of the year and with this wine as the base, the Cava undergoes a secondary fermentation and an ageing process of on its lees 12 to 14 months in bottle. The rather small amount of natural sugar from the grape added in the expedition liquor gives it a smooth and slightly sweet taste, softening its natural acidity without losing the fragrance it provides.
Maintain the serving temperature at around 6-8ºC. and your are suggested serving this Cava Rosy for breakfast, dinner, reception, BBQ, hot pot dinner, Salad. Dessert… it also great to go with some Indian dishes, Thai and almost all Japanese dishes Sushi, Sashimi, Sukiyaki, Curry Rice, Tempura. Keep open minded.
